A good lunch box does not need to be complicated to feel satisfying. This colorful combination of pasta, eggs, broccoli, tomatoes, leafy greens, and crisp rice cakes brings several textures and flavors into one convenient meal.
It is also easy to prepare ahead, making it a practical choice for busy weekdays. Lykkers can adjust the portions and seasonings to suit personal preferences while keeping the lunch box neat and appealing.

Ingredients

1 cup cooked pasta
2 large eggs
1 cup broccoli florets
1/2 cup cherry tomatoes
1 cup fresh spinach leaves
2 whole-grain rice cakes
1 teaspoon olive oil
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1/8 teaspoon black pepper
1/8 teaspoon salt

Preparation Time

Preparation time: 15 minutes
Cooking time: 10–12 minutes
Total time: About 25–30 minutes

Instructions

1. Bring a bowl of water to a boil and cook the pasta according to the package directions until tender. Drain well and allow it to cool slightly.
2. Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then cook the eggs for about 9–12 minutes.
3. Transfer them to cool water and allow them to cool before peeling.
4. Steam or lightly boil the broccoli florets for several minutes until tender but still firm. Drain thoroughly and let them cool.
5. Slice the cherry tomatoes in half and gently rinse the spinach leaves. Pat the vegetables dry so excess moisture does not collect inside the lunch box.
6. Place the cooked pasta in a bowl and add olive oil, lemon juice, garlic powder, oregano, black pepper, and salt. Toss gently until evenly coated.
7. Peel the cooled eggs and cut each one in half.
8. Arrange the spinach and tomatoes in one section of the lunch box, followed by the seasoned pasta and broccoli.
9. Place the egg halves beside the vegetables and add the rice cakes to a separate section.
10. Allow all warm ingredients to cool completely before closing the lunch box.
11. Refrigerate the lunch box until it is ready to serve.

Easy Ways to Customize It

This recipe is flexible, so ingredients can be adjusted according to what is available in the kitchen. Pasta shapes such as fusilli, penne, or macaroni can all work well. For a different flavor, replace oregano with dried basil or parsley.
Other vegetables can also be added. Sliced cucumber, grated carrot, bell pepper, or steamed green beans can bring different colors and textures to the box. If spinach is not available, another leafy green can be used instead.
The seasoning can remain simple, especially when the lunch is prepared in advance. A little lemon juice gives the pasta a fresh flavor, while olive oil helps prevent it from becoming too dry.

How to Pack It Neatly

A compartment-style lunch box is particularly useful for this recipe because the ingredients can stay separated. Put the pasta in the largest section, then arrange the broccoli and tomatoes beside it. Place the egg halves where they will not be crushed, and keep the rice cakes away from moist ingredients so they remain crisp.
For the best texture, avoid adding too much dressing. Excess liquid can make the pasta watery and soften the crisp components. If preparing the lunch box the night before, make sure cooked ingredients have cooled before packing and refrigerating them.
This lunch box combines simple ingredients into a meal that looks colorful without requiring elaborate cooking. The pasta, eggs, vegetables, and rice cakes each bring something different to the plate, while the light seasoning keeps the preparation straightforward. Once the basic combination becomes familiar, switching vegetables, pasta shapes, or herbs can create a fresh version for almost every weekday.
