Strawberry shortcake is a simple dessert that brings together soft, buttery biscuits, juicy strawberries, and lightly sweetened whipped cream. Each part is easy to prepare, and the finished dessert feels fresh without requiring complicated decorating.
We can prepare the biscuits first, let the strawberries soften with sugar, and whip the cream just before serving. With a few careful steps, we can make a homemade strawberry dessert that looks inviting and tastes balanced.

Ingredients

For the biscuits, you will need:
- 2 cups all-purpose flour, plus more for dusting
- 1 1/2 tablespoons baking powder
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 5 tablespoons cold unsalted butter, cut into small cubes
- 1/2 cup cold heavy cream
- 1/2 cup cold milk
- 1/2 teaspoon vanilla extract
For the strawberries, you will need:
- 1 1/2 pounds strawberries, hulled and sliced
- 1/4 cup granulated sugar
For the whipped cream, you will need:
- 1 cup cold heavy cream
- 1 1/2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract

Prepare the Strawberries

Start with the strawberries so they have enough time to release their natural juices:
1. Place 1 1/2 pounds of sliced strawberries in a large bowl.
2. Sprinkle 1/4 cup sugar over them and gently toss until the slices are evenly coated.
3. Cover the bowl and refrigerate until the shortcake is ready.
This creates a naturally sweet strawberry mixture with plenty of juice. The liquid can be spooned over the biscuits during assembly, adding moisture without making them soggy too early.

Make the Biscuits

Follow these steps for the biscuits:
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Add 2 cups flour, 1 1/2 tablespoons baking powder, 1 tablespoon sugar, and 1 teaspoon salt to a large bowl. Stir well so the dry ingredients are evenly distributed.
3. Add 5 tablespoons of cold cubed butter. Cut the butter into the flour mixture with a pastry cutter or similar tool until the mixture resembles coarse crumbs. Keeping the butter cold helps create a tender texture.
4. In a separate container, combine 1/2 cup cold milk, 1/2 cup cold heavy cream, and 1/2 teaspoon vanilla extract.
5. Pour the liquid mixture into the flour mixture. Stir gently with a wooden spoon until the dough starts to come together. Avoid mixing longer than necessary, as overworking the dough can make the biscuits firm.
6. Transfer the dough to a lightly floured surface. Gently press it into a rectangle, fold it in half, and press it into a rectangle again. Repeat the folding process once more.
7. Cover the dough with a clean kitchen towel and let it rest at room temperature for about 30 minutes.
8. Gently press the dough into a rectangle about 5 by 10 inches and roughly 3/4 inch thick.
9. Use a floured 2 1/2-inch round cutter to cut eight biscuits. Press the cutter straight down without twisting. Lightly flour the cutter between cuts if the dough begins to stick.
10. Arrange the biscuits on the prepared baking sheet, leaving about 1/2 inch between them.
11. Bake for 13–15 minutes, or until the tops are lightly golden. Transfer the biscuits to a rack and let them cool for about 10 minutes before assembling.

Whip the Cream

While the biscuits cool, prepare the cream:
1. Add 1 cup cold heavy cream, 1 1/2 tablespoons sugar, and 1/2 teaspoon vanilla extract to a mixing bowl.
2. Beat at medium-high speed until soft peaks form, which usually takes about 2 minutes.
Stop once the cream holds soft peaks. Overbeating can make the texture too firm, while properly whipped cream stays smooth and easy to spoon onto the shortcake.

Assemble the Shortcake

Once the biscuits have cooled, build each serving:
1. Carefully split each biscuit horizontally.
2. Place the bottom half on a serving plate, then add a generous spoonful of strawberries and some of their juice.
3. Add a spoonful of whipped cream, then place the biscuit top over the filling.
4. Finish with a little more whipped cream and a few strawberry slices.
The layers should remain visible, giving each serving a simple homemade look.

Final Thoughts

The key to a good strawberry shortcake is balance. Cold butter helps create tender biscuits, gently mixed dough keeps them light, and sugared strawberries provide both sweetness and moisture. Freshly whipped cream then brings the components together.
We can prepare the biscuits ahead of time, but assembling the dessert close to serving keeps the texture at its best. For a relaxed gathering, place the biscuits, strawberries, and cream on the table and let everyone build their own serving.
