Grilled shrimp can be wonderfully quick to cook, but getting the right balance between juicy centers and flavorful browning takes a little care.
This garlic-and-lemon version uses a few smart preparation techniques before the shrimp reach the grill, then finishes them with fresh lemon, parsley, garlic, and olive oil. The result is a simple dish with a crisp, charred exterior and plenty of fresh flavor.
Ingredients
2 1/2 pounds large shrimp, peeled and deveined
1/2 teaspoon baking soda
1 tablespoon kosher salt
1 teaspoon sugar
4 medium cloves garlic, minced
1/4 cup extra-virgin olive oil
1 teaspoon lemon zest
4 teaspoons fresh lemon juice
2 tablespoons fresh parsley leaves, minced
Freshly ground black pepper, to taste
The recipe yields about 4 to 6 servings and takes approximately 1 hour 30 minutes for preparation and 5 minutes for cooking, for a total of about 1 hour 35 minutes. Most of the preparation time comes from the refrigerator rest rather than active cooking.
Instructions
1. Place the shrimp in a medium bowl and add the baking soda, salt, and sugar. Toss until evenly coated.
2. Thread the shrimp onto pairs of skewers, arranging them snugly together. Alternating the direction of the shrimp helps keep them secure and makes the skewers easier to turn.
3. Suspend the skewers over a baking dish so the shrimp are elevated rather than sitting against the bottom. Refrigerate uncovered for 1 hour. This helps the outside surface become drier before grilling.
4. While the shrimp rest, combine half of the minced garlic with half of the olive oil in a small bowl. In a separate large bowl, combine the remaining garlic and olive oil with the lemon zest, lemon juice, and parsley.
5. When ready to grill, brush both sides of the shrimp with the garlic-and-oil mixture.
6. Preheat the grill over high heat and make sure the grates are clean and lightly oiled.
7. Place the shrimp directly over the hot area of the grill. Cook, turning occasionally, until they are just cooked through and well browned, about 4 to 5 minutes total.
8. Transfer the cooked shrimp to a cutting board and carefully remove the skewers.
9. Add the shrimp to the bowl containing the lemon, garlic, parsley, and olive oil mixture. Toss gently until evenly coated.
10. Season with additional salt and freshly ground black pepper to taste, then serve immediately.
Why Drying Matters
It may seem unusual to refrigerate the skewered shrimp uncovered, but surface moisture affects browning. When the outside is wet, heat first has to evaporate that moisture before strong browning can develop. Drying the surface gives the grill a better opportunity to create the flavorful browned exterior associated with grilled food.
It is also recommended to place the shrimp close together on the skewers. This reduces the amount of exposed surface area and gives the centers a little more protection while the outside develops color.
Finish With Fresh Flavor
The garlic, lemon, parsley, and olive oil mixture is added after grilling rather than relying entirely on a marinade beforehand. This keeps the finishing ingredients bright and fresh while allowing the grilled shrimp to retain their charred flavor.
Fresh lemon juice provides acidity, while lemon zest contributes another layer of citrus aroma. Garlic adds savory depth, and parsley brings a clean herbal note. Together, these ingredients keep the dish flavorful without requiring a complicated sauce.
Serving Ideas
The finished shrimp can work as the centerpiece of a simple meal or as part of a larger spread. Serve them alongside grilled vegetables, a crisp green salad, roasted potatoes, or warm bread. The lemon-garlic mixture also makes the shrimp particularly easy to pair with foods that have mild flavors.
For the best texture, serve the shrimp soon after they are tossed with the finishing mixture. They are at their most appealing when the exterior still has some char and the center remains tender.
Grilled Shrimp with Garlic and Lemon shows how a handful of ingredients can produce a dish with plenty of character. The most important details are not complicated: choose large shrimp, give them time to dry, keep them snug on the skewers, use strong grill heat, and avoid overcooking. Finish with fresh garlic, lemon, parsley, and olive oil, and the result is a straightforward grilled dish that feels both fresh and satisfying.
