Banana bread has stayed a favorite because it turns everyday ingredients into a simple, comforting loaf. Ripe bananas give a moist, tender crumb, while walnuts add crunch and honey brings gentle sweetness.
It works warm for breakfast, with an afternoon cup of tea, or packed as a snack for the next day. It is also easy to make and forgiving for beginner bakers. This guide covers the ingredients, the steps, and a few tips for baking, storing and serving the loaf.

Dry Ingredients

The recipe uses two bowls, one for the dry ingredients and one for the wet. Measure everything before you start so the batter comes together quickly. For the dry bowl, you need:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

Other Ingredients

The wet ingredients go into a second, larger bowl, and the walnuts and oats are added at the end. Choose very ripe bananas, because the darker the peel, the sweeter the fruit inside and the softer the loaf. For these, you need:
- 3 ripe bananas
- 1/3 cup honey
- 1/4 cup brown sugar
- 1/3 cup melted unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup chopped walnuts
- 1 tablespoon rolled oats, optional, for topping
This makes one loaf.

Preparation Steps

The dry and wet ingredients are prepared separately and combined later. Start with the oven, the pan and the two bowls:
1. Preheat the oven to 175°C and lightly grease a loaf pan or line it with baking paper.
2. In one bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until evenly combined.
3. In another large bowl, mash the bananas until mostly smooth, leaving a few small pieces for extra texture.

Mixing Steps

Next, finish the wet mixture and bring the two bowls together. Work gently at this stage, because overmixing develops the flour too much and can create a denser loaf. Stir only as much as each step needs, in this order:
4. Add the honey, brown sugar, melted butter, eggs, and vanilla extract to the mashed bananas and whisk until smooth and well blended.
5. Gradually fold the dry ingredients into the wet mixture with a spatula, stirring only until no dry flour remains.
6. Gently fold in the chopped walnuts.

Baking Steps

The batter should look slightly lumpy rather than perfectly smooth. Small lumps are normal and disappear during baking, leaving a tender crumb. If the top begins browning too quickly in the oven, loosely cover it with foil during the final 15 minutes. Bake and cool the loaf as follows:
7. Pour the batter into the prepared pan, smooth the top, and add the oats if using.
8. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out clean.
9. Cool the loaf in the pan for 10 minutes.
10. Move it to a cooling rack for another 20 minutes before slicing.
A few moist crumbs on the toothpick are fine. Waiting through the full cooling time gives clean slices instead of crumbly ones.

Baking Tips

A few techniques make the loaf softer and more flavorful. Bananas with plenty of brown spots mash easily, blend smoothly into the batter, and add moisture without extra sweeteners.
If your bananas are still yellow, leave them at room temperature for another day or two before baking. Walnuts provide a crunch that balances the softness of the bread. For richer flavor, lightly toast them for about 5 minutes before mixing them into the batter. Chopped pecans also pair well with bananas and honey.

Storage

Allow the banana bread to cool completely before storing it. Wrap the loaf tightly or place it in an airtight container. It stays moist at room temperature for up to three days or in the refrigerator for nearly a week. Individual slices also freeze well for up to two months, which makes quick breakfasts and snacks convenient.
Fresh banana bread is good on its own and equally enjoyable lightly toasted. Spread a little butter, cream cheese, or almond butter over a warm slice, or serve it alongside fresh fruit and yogurt for a more filling breakfast.
With ripe bananas, a gently mixed batter and enough cooling time, this loaf is hard to get wrong. If a slice has been stored for a day or two, warm it for a few seconds before serving to bring back its soft texture and freshly baked aroma.
